Hello my friends, I wish you well. Bear and I still cough like  just risen
smoking folks  but we’ve about survived another malady I believe. Where did
all these new types of coughs and colds come from anyway? It’s not like
mankind didn’t have enough already. Everywhere you go people  say "I never
had anything like this before". I’m all for trying new things, but I believe
I’d rather be bored  and have a plain old cold.
The Grand Kids were visiting  away  for Easter so it was pretty much a
regular day around here. Bear decided to lay around and rest up for a hard
working Monday and I went out to the Funny Farm and went walking in the
woods with son Richard. His Jeep got us from one area to another much faster
than just walking used to. He’s very good about "wildflower stops" but tends to just agree with me when I point out a real neat cedar stump I’d like for the
wildflower gardens. Now that’s where the truck would come in handy! I always
test every stump we walk by to see if it’s movable- they look so nice with
ferns growing up around them. One of my large ones has Virginia creeper
climbing it on two sides and Bluebells growing all around the base.
I’m pretty well set up for hiking now, since I bought a set of aluminum
ski poles at a yard sale. I don’t trust sticks since I fell on my face last Spring out there in the country. These are very lightweight and shiny enough to find when I lay them down. And boy do I have great hiking boots! They have all kinds of straps and such to keep me from turning my ankles. They’re made for boy’s
but I figure nobody’s going to see me but Son and stray critters.
I forgot to change back into my old lady shoes before I left Richard’s,
and was too tired to worry about it when I stopped at the supermarket on the
way home. A quick look when I got out of the car assured me that the boots
were pretty well covered by my slacks. Not until I was at the checkout
counter - after a leisurely tour of this "Super" market- did I happen to
look in a mirror and see the big red lights in the heels that flash every
time my foot hits the floor! Woops!  Grannies cheeks looked like she’d used
too much rouge for a minute there!
The next time all the kids are in for Easter you might want to try this
recipe  I found in an old cookbook.
Or you could cut down on the ingredients and fix it anytime to use up all
those eggs Pa keeps bringing in from the hen house.
    Bacon and Egg Supreme

½  c butter or oleo
¼ c minced onion
½ c flour
½ tsp. salt
1/8 tsp. pepper
4 c milk
1 ½ c shredded Swiss cheese
16 hard-cooked eggs, quartered
1 c diced Canadian bacon (Ham ?)
1/3 c chopped pimento
1 ½ c soft bread crumbs
3 Tbls. Butter or oleo, melted
Toast or biscuits

Melt butter in a big skillet and saute onion till it’s tender. Stir in
flour, salt, and  pepper. Stir in the sweet milk to make a smooth gravy.
Stir in the cheese till it melts. Put half of the eggs in a 3-quart
casserole Sprinkle on half of the bacon and pimento. Pour on half the
sauce—repeat layers, ending with sauce. Cover and bake at 375 F for 45
minutes. In a small bowl, combine bread crumbs and the 3 Tbl. butter; mix
well. Remove cover; sprinkle with buttered bread crumbs. Bake 15 minutes.

I want to thank you kind souls who have touched base to let me know you
read my scribbling. A big hello to Old Fred in Utah- always glad to hear
from you. Let me know if I can help you, folks. Write me at 1417 Lakeview
